Abadía de Gomariz ist ein Rotwein, der von der Kellerei Coto de Gomariz in Leiro (Ourense), D.O. Ribeiro, hergestellt wird.   Das Reservat Coto de Gomariz ist das älteste eingetragene Weinreservat der spanischen Halbinsel. Es liegt im Valle de Gomariz, wo seit dem zehnten Jahrhundert Wein hergestellt wird. Jahrhundertelang gehörte es zu verschiedenen kirchlichen Orden. Erst Mitte des 19. Jahrhunderts ging es durch die Entmachtung von Madoz in private Hände über und wurde auf verschiedene Weingütern und kleine Weinbauern aufgeteilt. Einer dieser Privateigentümer ist die Familie Carreiro.  In den 70er Jahren beginnt Ricardo Carreiro Ameijeiras mit der Wiederbelebung von einheimischen Rebsorten und füllt im Jahr 1980 seine ersten Flaschenweine ab. Xose Lois Sebio, technischer Direktor und Önologe seit 2001, beginnt damit, die Weinberge auf ökologische und biodynamische Weise zu kultivieren. Die heutigen 24 Hektar, die Gomariz besitzt, werden fast alle durch die Methoden des natürlichen Weinbaus bewirtschaftet(nach den Theorien von Fukuoka). Diese Art des Weinbaus, die verschiedenen Böden (Granitsand, Ton und Schiefer) sowie ein einzigartiges Mikroklima sind ideale Bedingungen, um authentische Weine zu erhalten, die den Charakter ihrer Herkunftsregion widerspiegeln.   Abadía de Gomariz ist ein Wein aus Sousón, Brancellao, Ferrol und Mencía, von eigenen Weinbergen, die im Gomariz-Tal gelegen sind. Die Lese erfolgt von Hand in 18-kg-Kisten mit Selektion der Trauben im Weingut. Nach Ankunft der Trauben in der Bodega erfolgt eine Kaltmazeration vor der Gärung, um dann mit wilden Hefen bei kontrollierten Temperatur in Edelstahlbehältern mit häufigem Umpumpen und/oder Umstoßen des Tresterhutes zu fermentieren. Der Wein reift 12 Monate in gebrauchten 300-Liter-Fässern aus französischer und amerikanischer Eiche. Bevor der Wein für den Markt freigegeben wird, ruht er mindestens 6 Monate lang in der Flasche.
