La vendemmia viene effettuata in più passaggi selezionando di volta in volta i grappoli affetti dalla muffa nobile, fenomeno dovuto al fungo Botrytis cinerea favorito dal particolare microclima della zona. Le uve sono quindi vinificate in bianco tramite pressatura soffice e successiva fermentazione alcolica del mosto in botti di rovere francese, nuove al 30%, contenitori nei quali il vino resta a maturare per 18-24 mesi fino al definitivo imbottigliamento. All’esame visivo il Sauternes Chateau du Mayne La Merci rivela una calda tonalità giallo dorato dai riflessi ambrati di grande intensità. Il panorama olfattivo è descritto da vividi sentori di ananas in confettura, scorza di limone candita, fichi, spezie dolci e zafferano.
