Il Porto Tawny 30 Anni della cantina W. & J. Graham’s è un vino rosso liquoroso, profondo ed estremamente piacevole prodotto esclusivamente da uve provenienti da 5 celebri cru - Quinta dos Malvedos, Quinta do Tua, Quinta das Lages, Quinta da Vila Velha e Quinta do Vale de Malhadas - della Valle del Douro, nel nord del Portogallo. Questa etichetta è un Aged Tawny Porto, ossia un vino ottenuto da un blend di uve Touriga Nacional, Touriga Franca, Tinta Roriz, Tinto Cao e Sousao che viene poi fortificato mediante l’aggiunta di alcol vinico o aguardente e che effettua un lungo periodo di maturazione ossidativa in botte, in questo caso di ben 30 anni. La cantina, proprietaria di circa 7 ettari di vigneto condotti secondo il regime biologico, è una realtà a conduzione famigliare oggi gestita dalla famiglia Symington, che l’ha comprata nel 1970 e si occupa personalmente di tutti gli aspetti della produzione, dalla vinificazione all’imbottigliamento. Il W. & J. Graham’s 30 anni Tawny Porto è prodotto con uve attentamente selezionate e vendemmiate a mano nel momento in cui queste raggiungono la loro ottimale maturazione, generalmente nel mese di ottobre. I grappoli vengono poi portati in cantina dove sono pestati, in parte manualmente in “lagares” di pietra, basse vasche per la pigiatura, e in parte, vista la scarsità di manodopera, in “lagares” automatizzati di acciaio inox. Successivamente il mosto svolge la fermentazione alcolica per circa 24, 36 ore o comunque fino al raggiungimento di 5-9 gradi alcolici dopodiché la fermentazione viene stoppata mediante l’aggiunta di alcol per creare un vino dolce fortificato. Il Porto così ottenuto viene a questo punto portato al Graham’s Lodge, in Villa Nova de Gaia, dove invecchia in botti di quercia da 534 litri per un periodo di 30 anni. Il 30 Anni Porto Tawny della cantina W. & J. Graham’s si presenta alla vista di un colore rosso aranciato con venature ambrate. Al naso compaiono intensi aromi di frutta matura e frutta secca tostata, tra cui la ciliegia, l’uva passa, i fichi secchi, la noce e la nocciola, note mielate, sentori caramellati e piacevolissime sfumature boisé. In bocca è di grande impatto, denso, succoso e vellutato, connotato da un grande equilibrio e da un finale lunghissimo che sembra non volere mai svanire. Questo di W. & J. Graham’s è un Aged Porto vitale e fresco ma estremamente complesso perfetto per un momento di meditazione o come atto finale per concludere una cena tra amici.
