The wine production is managed by Marco Roveda, with help from enologist Andrea Zampieri and agronomist Franco Fierri. The three comprise a team focused on high-quality wines that embody the unique characteristics of the terroir and grape varieties. With a highly modernized winery, La Bollina utilizes some of the newest techniques in winemaking including a micro-oxygenation system and special filtration technique that keeps the wine intact even through its final stages of production. Tavros Primitivo di Manduria is 100% Primitivo, or Zinfandel as it is known outside of the region. The nose is greeted by a bouquet of sweet ripe fruit, dark chocolate espresso beans, cinnamon rolls and shaved vanilla. A punch of tobacco and cedarwood comes through with a touch of leather. Papale Primitivo di Puglia is one of the winery's most iconic labels, produced with Primitivo grapes harvested from the bush-trained vineyards of Contrada Papale, so named because it was once owned by a pope. After harvesting and vinification at a controlled temperature, the wine ages in French tonneaux for at least eight months. The result is a rich, fruit-forward wine that reveals a brilliant, deep red color with violet reflections in the glass. Its aromatic profile is broad and fragrant with fruity notes of blackcurrant, blackberry, and cherry, followed by hints of licorice and cocoa.
